Poori with Potato Podimas



 
For Poori:
Ingredients:
Wheat Flour - 2 cups
Fine Sooji Rawa- 1 tbsp
Salt as per taste
Water to knead the dough
Oil for frying

Method:
Put flour, sooji rawa and salt in a large bowl. Pour water carefully to knead the dough until soft. Allow it to rest for 15 minutes. (I always cover the dough with the a wet cloth to avoid the dryness of the dough. If u don't have a wet cloth keep the dough in a box) After 15 minutes take out the dough and make small balls. Take one ball of dough and dip a corner of ball in oil and roll it out into 4 to 5 inches round.  If you use flour instead of oil, you can find black residues in the frying oil.


 
In the mean while heat oil in a pan. Once the oil is hot put poori and immediately start flickering hot oil over the top of it with a spatula so that it will swell up like a ball.
 
Potato Podimas:
Ingredients:
Potato- 2 nos
Onion- 1 big
Green Chillies- 2 nos
Turmeric Powder- 1/4 tsp
Garam Masala- 1/4 tsp
Oil, mustard seeds, chenna dal and curry leaves for seasoning



Method:
Cook whole potato in a pressure cooker for 2 whistles. Once it is cooked crumble it and keep it aside.  Slice onion and green chilles in length wise.  Pour oil in a heated pan. Once oil is hot add mustard seeds, curry leaves and chenna dhal fry until it splutters.  Add the onion and fry for a minute.. Don't allow the onion to get brown. Add green chillies, turmeric powder , salt and water. Keep the lid and allow the onion to cook. Once onion is cooked add potatoes and salt. Stir it nicely and add more coriander leaves and cook for some more minute.
