Lime Pachadi

Ingredients:
Lime - 3 to 4 (cut into small pieces)
Small Onion - 6 (cut into small pieces)
Green chilly - 2 nos
Chilly powder - 1 tsp
Turmeric powder - 1/4 tsp
Asafeotedia powder - 2 pinch
Tamarind water - 1/2 cup
Oil - 1 tsp
Mustard Seeds - 1/2 tsp
Curry leaves
Salt to taste, Jaggery

Method:
Pour oil in an pan put mustard seeds and curry leaves. Once it splutters add chopped onion fry for a while and add chopped lime & green chilly. Fry until the onion gets brownish. Then add chilly powder, turmeric powder, asafotedia, salt and add tamarind water. Allow it to boil and keep the gas in sim. Add jagerry for taste.

Carrot Shake

Ingredients:
Carrot - 2 big
Cold Milk - 2 cups
Sugar - 2 to 3 tsp (according to taste)
Crushed Elachi - 3
Vanilla Essence - 3 drops

Method:
Grind the Carrot in 1/2 cup water and take the juice from it. Add sugar, cold milk, elachi and vanilla essence. Blend all.

One of my favourite shake. Try this !!!!

Paal Ada Payasam

Ingredients:
Ada - 2 cups
Milk - 3 cups
Sugar - 1 cup (according to the taste)
Water - 5 cups

Method:
Pressure cook ada in water for 3 whistles. Remove ada from cooker and wash in water. Then take a pan add washed ada, sugar and 1 glass ofwater. Keep it in sim and cook until the sugar dissolves. In the meantime pour 3 cups of milk and keep it in sim for atleast an hr. Keep stiring to avoid burning. Once the sugar dissolves add the milk and add fried cashews, kismis, and elachi powder.

Mouthwatering payasam is ready. Try this and please send me the comments

Aappam

Ingredients:
Raw Rice - 2 cups
Coconut - 1/2 cup
Baking Soda - 2 pinch
Salt and Sugar for taste

Method:
Soak the rice for 4 to 5 hours. Grind rice with cocnut. After grinding add salt and sugar, and keep it to ferment. Next day before making appams add baking soda.
Now the appam is ready.

Tips:
For extra taste add 1/4 cup coconut milk before making appams

Dry Ginger Coffee (chukku kappi)

Ingredients:
Coriander Seeds - 1 cup
Jeera - 4 tsp
Pepper Seeds - 4 tsp
Dry Ginger (chukku) - 2 pieces

Method:
Take a pan and fry corainder seeds and jeera. Then mix this with pepper seeds and crushed dry ginger and powder it. Allow it cool and store it.

To make Cofee:
Boil one cup of water and add black jaggery (Karupatti). Then add one tablespoon of the prepared powder. Sim and allow it boil and stir it. Ginger coffee is ready!

Benefits:
This drink is especially suited as a medicine for cough, throat pain. Add tulsi leaves to increase the medicinal value.

Butter Biscuit

Ingredients:
Maida - 5 cups
Sugar - 3 cups
Besan flour (kadala mavu) - 1 cup
Oil -1 cup
Ghee or Butter - 1cup


Method:
Mix all the ingredients together. In the meanwhile pre-heat oven for 300 deg F. Make small balls of the dough and make it into desired shape. Bake this in oven for 20 to 25 minutes. Now the Butter Biscuit is ready.

Mint Chutney

Pudina (Mint) Chutney
Ingredients:
Pudina (Mint) Leaves - 1/2 cup
Grated Coconut - 1 cup
Green chilly - 2 to 3
Tamarind - small piece
Salt - to taste


For Seasoning:
Oil - 1 tsp
Mustard Seeds - 1/2 tsp
Skinned urad dhal- 1/2 tsp
Dry Red chilly - 1

Curry Leaves

Method:
Pour oil in a pan. Fry pudina leaves for 2 seconds. After that add coconut, green chillies. Fry for 2 minutes and keep it aside and let it cool. Grind with tamarind and salt. Then season it with mustard seeds, skinned urad dhal, and dry chilly.

Simple Spicy Fish Fry

Ingredients:
1. Promfret Fish -5 to 6 small pieces
2. Chilly powder- 2tbsp
3. Turmeric powder -1/2tsp
4. Pepper corns - 3/4 tsp
5. Ginger Garlic paste - 1tsp
6. Small onion - 2 to 3
7. Salt to taste

Method:
Grind ingredients 2 to 6. Marignate the fish with this grinded masala for atleast a half an hour or overnight. Shallow fry this marignated fish. Now spicy fish fry is ready!!!!!!!!!!!!

Mushroom Thuvaran

Ingredients:
1. Mushroom - 50 gm (cut into small pieces)

2. Onion - 2 (cut into length wise)
3. Grated coconut - 1/4 cup
4. Chilly powder - 1 tsp
5. Turmeric powder - 1/2 tsp
6. Fennel seeds (Sombu) - 1/2 tsp
7. Jeera - 1/4 tsp
8. Garam Masala - 1/2 tsp
9. Oil - 1 tbsp
10. Skinned urad dhal - 1 tsp
11. Mustard seeds - 1/2 tsp
12. Curry leaves, Salt to taste

Method:
Soak the mushroom in hot water for 5-10 minutes. Keep it covered. Pour oil in a pan . Put mustard seeds and urad dhal.. allow it to splutter and add curry leaves. Then add the sliced onion. In the meanwhile take the mushroom and squeeze the water out and keep it aside. Fry for sometime and add the mushroom and add some salt and keep the lid. Let it cook.
Grind ingredients 3 to 7 coarsly. Check whether the mushroom is cooked. If so, add the grinded masala and garam masala. Fry for some time. Add salt accordingly.


Now the yummy yummmmmy Mushroom thuvaran is ready!!!!!!!

Fried Onion Chutney

Ingredients:
1. Onion - 2 normal size
2. Tomato - 1
3. Dry red chilly - 2 to 3
4. Asafotedia (kayam) - 1 small piece
5. Garlic - 1 piece
6. Tamarind
, Salt - as per taste

Method:
Fry asfotedia and dry chilly in a small pan. Then fry the onion till brownish colour. Then add the minced tomatoes and fry for a while and keep it aside.

Grind the fried masalas with tamarind and salt. Heat oil in another pan, add mustard seeds to splutter, the half-broken dried red chilly to turn crisp, then curry leaves, and mix into the fried onion tomato chutney...

Now the chutney is ready....surely it tastes very good...and especially it goes with Dosa...

For extra taste:
While frying onion, add some coconut.
